Ingredients
I head of Cauliflower, cut into bite sized chunks
1 onion, diced
2 cloves of garlic, minced
1 cup coconut milk
2 cups vegetable broth
1 tsp sea salt
½ tsp ground black pepper, optional
2 tbsp Olive Oil
1 cup Cheddar Cheese, shredded
6 slices bacon, cooked and crumbled
Instructions
Add the Olive Oil, onion, garlic and the vegetable broth into the crockpot
Stir to combine
Add in the chopped Cauliflower and cook until the cauliflower is soft, roughly 3 to 4 hours on high heat
Add in the coconut milk, salt and pepper if desired.
Pour the soup into a blender, food processor or use an immersion blender to puree all together
Pour back into the crockpot and lower the heat to warm
Stir in the shredded Cheddar Cheese.
Scoop into bowls and serve hot
Top with the crumbled bacon and a sprinkle of parsley if you want.
