* Ingredients :
°1 large broccoli, cut into florets
°500 ml sharp cheddar
°250 ml (1 cup) panko breadcrumbs
°3 green onions chopped
°Salt and pepper to taste
Preheat oven to 205°C (400°F).
In a pot of boiling water, blanch the broccoli for 1 minute. Cool under very cold water.
In the container of the food processor, mix the broccoli until obtaining a grainy preparation.
In a bowl, beat an egg. Add the cheddar, half the breadcrumbs, green onions and broccoli. Add salt, pepper and mix well.
Shape 16 balls using about 30 ml (2 tablespoons) of broccoli preparation for each one.
Prepare two soup plates. In the first, beat the remaining egg. In the second, place the rest of the breadcrumbs.
Dip the bites in the beaten egg, then coat them with the breadcrumbs.
Line a baking sheet with parchment paper, then oil the paper. Place the bites on the plate. Bake for 25 to 30 minutes.
