Crispy apple and caramel cheesecake


+Graham Crust/Oats:
°¼ cup brown sugar
°1 cup graham cracker crumbs
°¾ cup rolled oats
°½ cup melted butter
°2 packages 8 oz cream cheese, softened
°2 tablespoons cornstarch
°¼ cup brown sugar
°¼ cup white sugar
°⅛ teaspoon ginger
°2 teaspoons vanilla extract
°½ teaspoon of cinnamon
+Crispy Apple Filling:
°¼ cup all-purpose flour
°¼ cup rolled oats
°¼ cup brown sugar
°½ teaspoon of cinnamon
°2 tablespoons coconut oil
°2 medium to large apples, peeled and thinly sliced
°Caramel topping, if desired
*Preparation time 20 mins
Preheat your oven to 350F.
In a mixing bowl, combine the graham cracker crumbs, rolled oats, melted butter and brown sugar.
Press to bottom of  9 or 10 inch springform pan.
Baking for 6 min. Removing to oven cool.
Meantime, in bowl of your electric mixer, blend cream cheese, brown sugar, white sugar, cinnamon, ginger, cornstarch & vanilla.
Once well mixed, pour over your graham cracker/oat crust.
To start your apple layer, arrange the thinly sliced ​​apple on top of the cheesecake in a single layer.
Garnish with the apple crisp topping. Baking at 350F about 41-51 min.
Once cooked, let cool 15 minutes, then refrigerate overnight.
