fries and onions  Crispy and delicious French fries match perfectly with the French fries on the fork, perfect for every breakfast or dinner!Potatoes are a versatile side dish that complements eggs and bacon, just like a whole roast chicken!
° 2 pounds Khmer potatoes (washed, cut into inch pieces and cubed)
° 1 yellow onion
° 1/4 cup olive oil (as needed, enough to cover bottom of pan)
° ½ tsp salt & pepper (to taste)
° ½ tsp powder garlic (to taste)
° 1 teaspoon smoked paprika (or paprika)

Grate a medium-sized yellow or white onion, wash the potatoes and cut them into cubes.* Peeled potatoes are optional.
Grated onions and washed potatoes are ready to be chopped and thrown into the pan.In a large saucepan, saucepan, or cast iron saucepan, heat vegetable oil over medium-high heat.
Add the grated onion, diced potatoes, and spices (salt, pepper, smoked paprika, garlic powder—unless you want to use minced garlic, keep the minced garlic until cooked, uncovered).  Mix the ingredients and distribute them evenly on the bottom of the pan.Cover with a tightly fitting lid and cook for 10 minutes or until golden brown.After cooking for 10 minutes, remove the lids from the potatoes and onions (if using, add chopped garlic). Leave uncovered to finish, 5 to 10 minutes, or until potatoes have softened with a fork and reached desired level of tenderness.
French fries after cooking with a lid and turn them to finish frying.When the potatoes are soft, remove them from the heat and eat them immediately.
