Great homemade meatloaf recipe.The inside of the meatloaf is very soft and juicy, with a sweet and spicy glaze, which gives the meatloaf a lot of flavor.Garnish with mashed potatoes and asparagus and serve light patties.
* ingredients :
° 2 tsp oil olive
° 1 onion, peel & finely chop
° 1 red bell pepper, de-seeded and chopped
° 2 cloves minced garlic
° 4 roasted green peppers, skinless, diced and coarsely chopped. Hatch peppers, pueblo or anaheim.
° 2 tsp chili powder
° 2 tsp salt
° 2 teaspoons oregano, your favorite Mexican oregano.
° 2 teaspoons cumin
° 28 ounces canned tomatoes, drained and chopped
° 1 tsp apple vinegar cider
° 1 1/2 pounds lean ground beef
° 1/2 pound ground sausage
° 3 cups rusk rusk
° 2 eggs, lightly beaten
° 1-15 ounce can of baked corn
° 8 tablespoons ketchup
° 8 oz shredded cheese cheddar
* Methods :
Heat oil olive in large skillet on high heat.
Add onion and sweet pepper and cook until onion is translucent.
Add the cayenne pepper, chili powder, salt, oregano, and cumin. Reduce the heat and simmer for 5 minutes, stirring occasionally, until the flavors blend.Add garlic and cook until aroma appears.Add tomatoes and cook for 5 minutes, stirring occasionally. Remove from heat, add vinegar and allow to cool to room temperature.
Preheat oven 350 degres.Mix the meat and sausage in a large bowl. Add the cooked tomato mixture, breadcrumbs, eggs and corn and mix well. Divide mixture into 10 ½ ounce portions and shape into loaves. Or make two 9×5 loaves.
Add 1 tablespoon of ketchup to each loaf and spread on top.
Bake for 40 minutes or until a meat thermometer in the center registers 160 degrees. Pour out any pan juices. Sprinkle the cheese evenly over the meatloaf and return to the oven until the cheese melts.
Tent the meatloaf with tin foil and let it rest for 10 minutes. serve.
